What you need:
• 1 medium red onion (cut into wedges, 1 inch)
• 1 medium zucchini (halved lengthwise)
• 2 yellow, orange, or red bell peppers (trimmed, seeded, halved)
• ½ tsp of salt (divided)
• ½ tsp of ground pepper
• 1 tbsp of extra virgin olive oil or coconut oil
• 1 piece of lemon (cut into 4 equal wedges)
• ½ tsp of ground pepper
• ¼ cup of fresh basil (sliced thinly)
