3 cups flour
1 teaspoon salt
1 teaspoon baking soda
1 cup butter ( room temperature )
1 cup sugar (cane is preferred)
½ cup brown sugar (packed)
3 eggs (room temperature)
1 teaspoon vanilla
1 ½ cups chopped nuts
1 ½ cups pitted dates
Gather ingredients; turn oven on to preheat at 350 degrees Fahrenheit.
While oven is heating, line the baking sheets with parchment paper. Using a medium bowl mix the flour, baking soda and salt; set aside. Mix the butter, sugar, brown sugar in a separate bowl for approximately 2 minutes until well combined. Add eggs one at a time, mixing after each. Add vanilla and mix well. Add flour mixture a small amount at a time. Low speed works best when adding this mixture. Stir in chopped dates and shelled and chopped nuts as desired.
Chill dough for two hours if you have the time; if not bake each pan of cookies 8 to 11 minutes, cookies will be puffed and slightly golden brown. Remove from oven and let cool for 5 minutes before placing on wire rack to finish cooling.
Note: Chilling the dough will allow for a cookie that is chewier. These make good cookies for cookie exchanges or gift giving. One easy way to attractively package these is to put them in a zip lock type bag and add Christmas stickers and ribbon.
